Bacon, ricotta and potato balls

Ingredients (yield 10 balls):

  • 5 slices of bacon, cooked, cut in the middle
  • 1 yukon gold potato, small, cooked and mashed
  • ricotta, equal portion as the potato
  • dry thyme
  • small sage leaves

Steps:

  • Mix ricotta, potato and thyme. Taste and season if necessary. Shape into small ball (about the size of a gum ball)
  • Wrap the ball with a piece of bacon. Garnish with a sage leaf, use a toothpick to hold the position.
