Strawberries & Parmigiano Reggiano salad

The recipe is from a printed ad of Parmigiano Reggiano which appears in some Italian magazines, it primarily aims to expand its usage. This salad consists of strawberries, Parmigiano Reggiano, plain yogurt, balsamic vinegar and some mints ... a very modern cuisine, for me at least. In case you feeling intimidating, actually there's a secret ingredient listed at last: una bella dose di ottimiso e qualche sorriso spontaneo (A dose of optimism). So they sell you an attitude. The last ingredient did give me a chuckle, but I like Parmigiano Reggiano anyway. Please remember this good cheese just a little can go a long way, my salad turned out very nice indeed.

Ingredients:
  • Strawberries, cleaned, cut vertically close to the end but not to separate
  • Few Parmigiano-Reggiano shavings
  • Few dashes of balsamic vinegar
  • Spoonfuls sweet cream
  • Spoonfuls plain yogurt
  • Mint

Insert the cheese into the strawberries, sprinkle some balsamic and mint. Combine sweet cream and yogurt, pour over to serve.

There can never be too much promotion for something like parmesan. It's in my top 10 of favorite food items. I love the combination with the strawberries. Nice picture!

The idea of fruit and cheese makes sense, but I would never have thought to combine them like this. I guess I should read those ads more often!
