Baked peach with almond & amaretti
Once in a while I'd bake fruit if it isn't flavorful enough, like these peaches, they just didn't have any taste no matter how red they looked. So I went to add a couple more of ingredients, tucked them in oven, while on the stove top I prepared coffee ... then here came a healthy and lovely breakfast. I'd like to share this baked peach's recipe to Weekend Herb Blogging (WHB) which is host by Paz this week. The founder of WHB is Kalyn who has been running the event for 42 weeks, great job Kalyn!
Ingredients (yield 2 persons for breakfast)
- 3 medium peaches, halved, seeded
- a big handful of grounded almond
- 12 amaretti biscuit, grounded
- spoonfuls of cream cheese
- spoonfuls of Demerar raw cane sugar
- honey

I've beeen wanting to try that recipe for a looong loooong time now...maybe i will after i get a HUGE pack of peaches from Costco this week-end!
Oh, yum! I tried a similar recipe last year and liked it a lot. I'm going to have to try your recipe, too! Thanks!

Oh, beautiful pictures! And I love amaretti, so I can just imagine how good that tastes. It's a great solution when a peach doesn't taste as good as it should.
Gattina,
Such lovely stuffed fruits. The pic with the honey dripping down down is simply fabulous! You always capture them at the right moment. :)
Very nice recipe... it makes me feel hungry...
Thanks for the remarks on my blog... I updated the post.
Ciao.
pavani, thank you!
nabeela, ahhh... we don't have Costco in our area, I guess it's similar to Wal*Mart...
paz, if you have time please let me know your recipe too! Thanks!
sher, I always dunk
amaretti in coffee or put in baking... my teeth can't deal with its tough chewyness, hehee...
Angie, you know my camera ended up sticky here and there, as my fingers couldn't resist!

The peaches look wonderful. I think peaches are one type of fruit that taste wonderful cooked. I'm so sorry you don't have Costco; in my humble opinion it's sooo much better than Wal-mart in lots of ways, not least of which is the way the company treats their employees.
Now if I can just get my hands on some amaretti! Love the recipe; looks totally yummy.
Wow! You're singing my love song. I happen to have peaches in a bowl on the table and almond paste in the cabinet. Yay for me! Beautiful pics.
oh, so nice. I have been meaning to do this for a while I have a good reason now! Gorgeous!
