Baked peach with almond & amaretti

Once in a while I'd bake fruit if it isn't flavorful enough, like these peaches, they just didn't have any taste no matter how red they looked. So I went to add a couple more of ingredients, tucked them in oven, while on the stove top I prepared coffee ... then here came a healthy and lovely breakfast. I'd like to share this baked peach's recipe to Weekend Herb Blogging (WHB) which is host by Paz this week. The founder of WHB is Kalyn who has been running the event for 42 weeks, great job Kalyn!

Ingredients (yield 2 persons for breakfast)

  • 3 medium peaches, halved, seeded
  • a big handful of grounded almond
  • 12 amaretti biscuit, grounded
  • spoonfuls of cream cheese
  • spoonfuls of Demerar raw cane sugar
  • honey

Steps

  • Pre-heat oven to 325F
  • In a mixing bowl, mix ground almond and amaretti, added spoonful of cream cheese just enough to make them combined. Spoon the nut mixture into the center of peaches, sprinkle a little bit of cane sugar over
  • Bake the peaches for about half an hour. Drizzle with honey, serve warm

    Oh, beautiful pictures! And I love amaretti, so I can just imagine how good that tastes. It's a great solution when a peach doesn't taste as good as it should.

    The peaches look wonderful. I think peaches are one type of fruit that taste wonderful cooked. I'm so sorry you don't have Costco; in my humble opinion it's sooo much better than Wal-mart in lots of ways, not least of which is the way the company treats their employees.
